Oatmeal Chocolate Chip Cookies

Have you ever found a recipe that is solo easy it's crazy?  Then you tweaked just a little bit that you feel better about drowning it in chocolate chips?

This Oatmeal Chocolate Chip Cookies is one of those for me.  I found it years ago on the back of a Oatmeal Package and then cut back on the sugar and added 1/2 cup of ground flaxseed for the extra healthy benefits.

Oatmeal Chocolate Chip Cookie


3/4 cup butter softened
1/2 cup brown sugar, packed
1/2 cup granulated sugar
1 egg
2 tbsp (30 ml) water
2 tsp vanilla extract
3/4 cip all purpose flour
1 tsp cinnamon
3/4 tsp baking soda
3 cups quick cooking  or minute oats
1/2 cup ground flax seed
1 1/2 cups semi-sweet chocolate chips

  1. Preheat oven at 350 F (180 C)
  2. Grease baking sheets
  3. Cream butter, sugars, egg, water and vanilla together
  4. Combine flour, cinnamon and baking soda.  Add to creamed mixture, and beat on low speed. Add in oats, flax seed and chocolate chips and stir.
  5. Drop by tablespoonfuls on to baking sheets.
  6. Bake in preheated oven for 12 - 15 minutes until golden brown.

This is a great after school snack.  Apparently this cookie is really good dunked in chocolate milk too.

* This recipe was found on back of Robin Hood Minute Oats bag but I adapted it by adding ground Flax seed and less sugar.
