Candy Cane Cookies

It's the final day of Christmas Cookie week! I think I'm completely baked-out now and I'm all set for every request the kids throw at me this Christmas season! I hope!

Today I'm sharing another family favourite!

Candy Cane Cookies! These have a crackly top and are crispy once they cool down, and have a nice peppermint taste to them.  Delicious dipped in hot chocolate!





Candy Cane Cookies
(makes 4 dozen cookies)

Ingredients:
  • 1 1/2 cups Powdered sugar
  • 1  1/4 cups butter, softened
  • 2 tsp vanilla extract
  • 1 egg
  • 3 cups All-purpose flour
  • 1 Tbsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup finely crushed candy canes
  • 1/4 cup (approx.) granulated sugar (to roll cookies in)
Directions:
  1. Cream butter and powdered sugar.  Beat in egg and vanilla.  
  2. In separate bowl  combine flour, baking powder and soda, and salt together,  and slowly add to wet mixture.  Stir in 1/2 cup crushed candy canes.
  3. Shape into 1 inch balls, using a teaspoon of dough.  Roll balls in sugar and place on greased baking sheet.
  4. Bake in 350F oven for 10 -12 minutes. Let cool.  Enjoy!
