RECIPE: Double Apple Cake

Delicious Double Apple Cake recipe from simple ingredients

Sometimes the best recipes come about when you are trying to use up little bits of random things. You take a bit of this and a bit of that, and you have something to serve.  This was one of those days. And this Double Apple Cake Recipe came out yummy. (the dog like it too, keep reading to find out why)


Double Apple Cake
(makes one 9 x 13 pan)

Ingredients:
  • 2 eggs
  • 1 cup brown sugar
  • 1/2 cup oil (I used Canola oil)
  • 2 tsp vanilla
  • 1 cup apple sauce
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 baking powder
  • 1/2 tsp salt
  • 3 cups all-purpose flour
  • 2 cups chopped apples (I used Granny smith)
Extras: you can also add 1 cup golden raisins, if you want

Directions:
  1. Preheat oven to 350.  
  2. Beat eggs and sugar, until creamy.  Mix in oil, vanilla and apple sauce.  Combine flour, baking soda and powder, salt, cinnamon and add to creamed mixture.
  3. Mix in apples and raisins (if using). You might want to hand mix in the apples and raisins because dough will be sticky.
  4. Pour into prepared 9x13 pan.
  5. Bake in 350F oven for 35-40 minutes.  Enjoy!

Here's a funny story about the dog! Well it's funny now that is.  She has gotten quite tall, after all, she is a Newfoundland/Great Dane mix.  Sometimes, when she sees that we are all off to dreamland, she will tip-toe down to the kitchen and see if anyone has forgotten anything on counters.  The night that I made the Double Apple Cake, I went to bed early to read my book (and not be tempted to eat another piece).  One of my girls must of helped themselves to a piece of cake after I went to bed and forgot to put it away from Jovi's reach.  I woke up the next morning, and Jovi was kind showing signs of "I'm sorry, I couldn't help myself". At first I couldn't figure out what it was she had done, until I saw crumbs on my flours, and then I looked at the empty pan on the counter... licked clean. She didn't end up sick or anything, but she was not hungry for the rest of day either.  Darn dog. At least we all got to have a piece of the cake, before it was devoured.
