RECIPE: Berry Yogurt Parfait


It used to be that I didn't eat my first meal until almost noon.  This year I have made a resolution to be healthier version of me, which includes eating a healthy breakfast every-single-morning before I rush out the door to get the kids to school on time.  I knew it had to be something simple and fast.  One of my absolutely favourites has been my Berry Yogurt Parfait.  I use Greek Yogurt which is is higher in protein.


Berry Yogurt Parfait 



Ingredients:
  • 1/2 cup of 0% Greek Yogurt (plain or Vanilla flavoured)
  • 1/2 cup of berries
  • 1/4 cup oatbran cereal
  • 1 Tbsp of ground flaxmeal

Directions:


  • Layer the yogurt with berries and sprinkle oat bran and flaxmeal on top.Enjoy!

I love the creaminess of the yogurt mixed in with sweetness of the berries, the crunchiness of the oat bran cereal and flaxmeal. It has everything in it to make me happy in the morning. I also like to have this as afternoon snack if I'm craving something sweet.  So yummy!
