{RECIPE} - Garlic - Lemon Chicken Kabobs

In our family we love to fire up our BBQ in the summer and one of our family favourites is our Garlic - Lemon Chicken Kabobs.

Garlic - Lemon Chicken Kabobs

  • 4 tbsp Olive oil
  • Zest of one lemon and juice of lemon (about 1/4 - 1/2 cup)
  • 3-4 cloves of garlic, crushed
  • 1 tbsp of fresh basil or parsley (or both), minced
  • 1/2 tsp of salt and pepper
  • 4 -5 chicken breast, cubed in large chunks
  • Skewers ( i used metal, if using wooden, soak in water for 1/2 before using on grill)

  1. In a small bowl mix olive oil, lemon zest and squeeze lemon juice out of lemon.
  2. Crush the peeled garlic and add to bowl.  (i use chefs knife on it's side to crush garlic, then I finely mince the crushed garlic ).  Add the minced basil/parsley.
  3. In a large bowl, add cubed chicken and sprinkle with salt and pepper.  Pour olive oil/garlic/lemon juice marinade over top and mix through. Refrigerate for 1/2 hour or longer depending on how much you like lemon. The longer it sits, the stronger the flavour. 
  4. Skewer the marinaded chicken and grill for a few minutes on each side.  Enjoy!

Add a side salad and you have a great summer lunch.
